Lenterainspiratif.id | kuliner – Udang rambutan merupakan salah satu side dish yang biasa disajikan di rumah makan mi pedas kekinian. Isiannya terbuat dari cincangan halus daging udang bercampur ayam dan tepung agar hasilnya kenyal dan lembut.
Sebagai lapisan terluarnya, resep udang rambutan ini menggunakan irisan memanjang kulit lumpia yang membuatnya renyah dan gurih, berikut bahan dan cara pembuatan udang rambutan :
Bahan-bahan:
200 gr ayam giling
200 gr udang kupas, cincang kasar
1 buah wortel, parut
1 sdt garam
1 ruas jari jahe, parut, peras dan ambil airnya
1 putih telur
1 sdm tapioka
1 siung bawang putih, haluskan
1/4 butir bawang bombay, cincang halus
2 sdt saus tiram
1 sdt kecap asin (secukupnya)
1 sdt minyak wijen
1 sdt gula
1/2 sdt kaldu jamur bubuk
Kulit Rambutan:
1 pack kulit pangsit siap pakai
Cara Membuat
1. Campur ayam dan udang dengan garam. Aduk rata.
Tambahkan wortel dan semua bahan lain.
Tes rasa dengan cara menggoreng secuil adonan.
2. Bentuk bulat-bulat, sisihkan.
Jangan terlalu besar ya bulatanya agar saat digoreng matang sampai ke dalam.
3. Gunting/iris tipis kulit pangsit.
4. Gulingkan adonan di atas kulit pangsit. Tekan perlahan agar adonan menempel. Kalau pakai adonan pencelup, celupkan bola udang ke pencelup, baru gulingkan di atas kulit pangsit.
5. Goreng hingga kuning keemasan.
6. Sajikan dengan sambal bangkok / saus sambal sesuai selera. (be)
